Gingered Pork in Oyster Sauce

This morning was one of those Sundays when everyone in the household would wake up very, very, very late. We didn't even wake to our usual wake up call from the Julie's mobile bakeshop. Which meant that we simply missed our daily supply of Jeremy's favorite "elorde" bread and Fran's most requested "plain ensaimada." Well, anyway, the kids still enjoyed beating their hotcake mix on their own while their Auntie Joyce cooked the batter in the pan for them. We all enjoyed our pancake breakfast a la McDo :)

As I engrossed myself chatting with cousin Elaine and Hubert, I was alarmed looking at the clock and that it was almost time for lunch. I have 3 mouths to feed and I haven't even thawed the meat! Tsk...tsk...tsk... Most of all, I don't have an idea what to cook, hahaha, I thought I have my day off on Sundays. Well, I guess not! Poor me...

Anyway, after 30 minutes of deliberating and the meat has softened, I finally made up my mind and came up with this delectable dish...

P.S. I'm so glad it passed the most critical standards of my daughter Frances' palate, who mostly chooses to eat only fried chicken, fried pork, hotdogs, and scrambled eggs. She hates anything with sauce except for spaghetti, so I'm so happy she has tried to explore eating this one with oyster sauce:)

Rain, Rain, Rain...

Summer is at it's peak, and all I could wish is for rain to come at this time of the year just to hydrate our cracked lands and not to mention our minds too, hehehe. Anyway, I had my first attempt at digital scrapbooking last year, getting my inspiration from my ever artistic sister-in-law, Jolana, who's so good at generating layouts from the pictures she and my brother, Rene take so often. The March that was...

The month of March flew by so fast yet it left me with sweet memories. I was just so overwhelmed with so much activities to go to. I always caught myself always running against time--- the kids final exams; school practices for two weeks; Moving Up Day; Graduation Day; Echie and Mira's wedding; and lastly, Lola Pat's 83rd birthday celebration. The last two activites were two occassions when some family members flew in from the U.S. like Aunt Margarette Helen, cousin Echie, and Ate Catchy with her family.

What can be more fulfilling than seeing your kids up the stage with all confidence? As what Father Ivan told me during the program, these kids don't even have the faintest idea of what stage fright is, hehehe. " What's that?"

I'm back!!!

It's been a two year break I had without tinkering on my blog. Now that I have moved in to our new house with my newly installed internet connection, you can expect more posts coming in :)

Yet for now, I'll leave you with a promise that I will compose a new post as soon as I'm done with my house cleaning since hubby is coming soon in time for our 7th year wedding anniversary and house blessing :)

busy...busy...busy...

It's been a month since Hubert has left for China. And it's just now that I got the chance to sit down and tinker on the pc for a much longer time. Since the time Hubert went to Suzhou, life has been so busy on me. Now, I know how it feels to rear the kids alone. It's a real big sacrifice on both Hubert and me, but I know it's for our future. At least Jeremy looks forward to the time Papa Bert comes home with his new toy, his Gameboy or a PSP perhaps, hehe, and Frances Clare with her new pink room :)

As for me, I just keep myself busy, sending off the kids to school and also doing my presidential duties in school, hehe ( PTA President po ang beauty ko! "lol") and in the evening, after study time with the kids, I also work on the side by accepting tutorial services within the subdivision. Just trying to keep myself busy to fight off the loneliness of having my love far away from home. Hirap pala!

Kawasan... I'm back...

Last July 17, we went to Kawasan Falls in Matutinao, Badian, Cebu. It's been 13 years since I last set foot on the trails towards Kawasan falls, and the thought of going back there, this time with two kids in tow has created mixed feelings in me. First, it got me so excited going back there since the last time I went to the falls was when I was yet in my sophomore year in high school. I was so eager to find out how Kawasan falls now looks like after all those years. At the same time,I was worried about the getting their by foot, one of my kids might surrender walking in the middle of our trek,and it's not easy carrying them on my back, oh my back... It's about 30-minute walk starting from the spot where we parked our service beside Badian church. What a relief when I found out that the paths leading to the falls have been improved from how it used to be, a sturdier foot bridge has replaced the rotten wooden one, and most of all, the kids Jeremy and Frances had the energy to really walk with us. Thanks God, what a relief, whew!! :)
